The Fresno Bee had an article on freezing fruits and veg in yesterday's paper. I could have probably linked to it for future reference, but I have a shiny scanner on my desk!
A trick for berries - wash and DRY. Leave hulls on strawberries. Then get a block o'dry ice and smash it with a hammer (wrap it in a towel). Stir ice chips and berries together in a metal bowl (hold on with a towel) and place in a cooler. Prop the cooler open enough for sublimating gases to escape. When frozen, transfer to ziplocks and store in freezer.
Dry ice freezes the berries SO much faster, the ice crystals that form in the berries are much smaller and do less damage to the cell walls. End result - when you thaw them, the texture is nearly fresh.
;-)
Oh, and I'm too lazy to go add this into your last post. Reading wise, you might light P.J. O'Rourke's "On the Wealth of Nations." It's very interesting from a politics and economics perspective. It gives you a working knowledge of the Wealth of Nations - AND P.J. is a biting political satirist, so it's an entertaining read as well. You might like it. (Those of us who still mourn the passing of Jack Kemp are fond.)
Thank you for the recommendation on the berries, it is greatly appreciated. As is the recommendation on the book, I had already read Adam Smith's 'Wealth of Nations', but a modern take on the material might be interesting. While a number of the ideals of the book have been bourne out over time, quite a number have also shown their downsides as well. An updated perspective would be of interest.
